I was in my tweens and my best friend Sue invited me to dinner. Before I could answer she excitedly said, โ€œWeโ€™re having pierogies!โ€

โ€œWhatโ€™s a pierogi?

She explained itโ€™s Polish comfort food. Itโ€™s like a dumpling, made of dough and stuffed with cheese, potato, or sauerkraut. They are served with sauerkraut and sour cream Her Mom was making them from scratch and it was a special treat.

She had me at cheese.

I had no idea how hard it is to make homemade pirogies. I arrived and we had a wonderful dinner of pierogi covered with butter and sauerkraut on the side. I tossed on a huge dollop of sour cream and they were amazing. Sue made sure I tried each flavor and I was asked which was my favorite.

โ€œAll of them!โ€

Today is Pierogi Day and I am celebrating her, her family, and especially her Mom for sharing this wonderful Polish delicacy with me. This is a traditional Polish meal served on Christmas Eve. It hooked me on these little dumplings; I have had them at Polish festivals for years.

As a pescatarian, I buy premade and frozen pierogies frequently. I fry them in a pan with olive oil until they are golden. I find theโ€ฆ
